This easy raspberry bourbon lemonade cocktail tastes just like summer! It’s a perfect happy hour quencher for a hot day.

Raspberry Bourbon Lemonade - A very simple summer cocktail!

This has been quite a week I tell you, and I could really use a cocktail like this sweet and tart bourbon drink. My little one WILL NOT GO TO SLEEP.  The days of both kids happily in bed by 7:30 have been gone for the past few weeks, and it has taken me over two hours to get the little one to bed almost every night.  I’m exhausted, frustrated, and desperate.  I spoke to a trusted sleep expert today, and she gave me a plan that basically surmounts to letting him cry.  I have never, never wanted to let my kids cry at bedtime, but I am so desperate for help that I am willing to give it a try for a night or two.  I hope to quickly get his sleep back on track and be back to a happy, rested family.

Now, let’s get to the cocktail recipe! This tasty drink only takes a minute to mix up, and it would be very easy to make for a crowd. I used high-quality pre-made lemonade, but you could use your own recipe of course.  Since I’m writing this in summer, fresh raspberries are plentiful and inexpensive these days. If you can’t swing fresh raspberries when you make up a batch of this grownup lemonade, just use frozen instead. It will still taste great, but it will probably be a bit pinker. More pink is always a good thing if you ask me :)

Raspberry Bourbon Lemonade

This Raspberry Bourbon Lemonade cocktail is very simple to make thanks to pre-made lemonade.

Instructions

  1. Place 5 raspberries in the bottom of a 12-oz. glass. Lightly press the berries with a spoon to mash them a little but not smash completely.
  2. Fill glass 2/3 full with ice, and add lemonade. Pour bourbon over lemonade, and top with seltzer. Float remaining raspberries on the top, and serve with a straw.
  3. Finished cocktail will have a slightly layered appearance when prepared this way, which looks pretty, but stir with the straw before enjoying.

I’ve heard the same thing from other people – let them cry. It will wear them out and they will get to bed. In fact, my mom used to do this with my brother and I when we were kids. I hope things get back to normal for you soon!

I’m on it, Andi, though I ate our last six raspberries just this morning :-( I see a strawberry substitution ahead. bourbon and lemonade? ahhhhhh… sounds lovely!

So sorry to hear bedtime has been tough. Good luck with new tactics and I hope you feel better rested, less desperate, etc. Do you know this blog and book?

I bought the book for myself for Mother’s Day and it makes me laugh every time. Maybe the author has some advice for bedtime troubles? Good luck and carry on! It’d be ok to take weeks off from the menus every now and again if you need extra rest, etc. No one will think any less of the Amazing Weary Chef!!!

Thanks, Liz. I’m trying not to take weeks off, but I might only have 3 new recipes this week. Next week both boys are going to The Short One’s school 4 days, which will be my summer vacation and I can get caught up (maybe sneak in shopping and a pedicure too)!

I will look for that book. I don’t have much time to read, but I love a good laugh about motherhood!
