  This spicy, light buffalo potato salad is delicious, but I must warn you: It is slightly addictive, which can be problematic if you are the only person in your house who likes it. My boys weren’t interested because of the hot sauce, and The Pants doesn’t like creamy salads. That left me with an entire batch of potato salad to myself this Fourth of July. Thankfully, with light mayonnaise and low fat yogurt, I couldn’t do too much harm when I kept refilling my bowl throughout the day! I am not a big fan of raw celery, so I didn’t include it here, but if you are, then definitely add some with the green onions.  The crunch will be a nice addition to the recipe. I hope you will enjoy this buffalo potato salad at your next picnic or barbeque!

Light Buffalo Potato Salad

This spicy, light potato salad will be perfect for your next picnic or barbeque!

  • Total Time: 20 minutes
  • Yield: 4-6 1x

Ingredients

Units Scale
  • 2 pounds red and/or gold potatoes diced into 1/2″ cubes
  • 1/2 cup light mayonnaise
  • 1/2 cup low-fat plain yogurt
  • 24 tablespoons hot sauce (I used 3.)
  • 1/2 teaspoon kosher salt
  • small bunch of green onions thinly sliced (about 1/4 c.)
  • 2 hard boiled eggs peeled and diced

Instructions

  1. Place diced potatoes in a medium-sized stockpot, and cover with water. Add about 1 tsp. salt, and bring to a boil. Boil for 10 minutes or until fork very easily glides into potatoes. Drain and gently rinse with cold water for about one minute.
  2. In a large bowl, whisk together mayonnaise, yogurt, hot sauce, and salt. Fold in potatoes, green onions, and boiled eggs until evenly combined. Eat immediately or refrigerate until ready to serve.

Thanks, Tanya! I didn’t know I had a problem with potato salad until I made this version. I was falling asleep when I wrote this, and I forgot to include boiled eggs in the recipe! That is fixed now :)
