SO EASY! Only one pan to clean! Prep it, pop it in the oven, and take it out when it’s done! It seriously made me want to start turning all our meals into sheet pan dinners.

It is a Versatile Recipe

I love this roasted sausage and peppers sheet pan meal for a few reasons. It’s a pretty simple meal itself, so you can pair it with a salad, and dinner is done But wait! You can easily take this meal up a notch.

  • Toss the roasted sausage and peppers with some olive oil and pasta for a more filling meal.
  • Also, you can chop up the sausage and peppers and use them as a filling for lasagna. That will be a tasty lasagna with an Italian twist!
  • Additionally, you can also chop the sausages and peppers and prepare some fine burritos.

Instructions

  1. Preheat oven to 350 degrees.
  2. Place the sausage, red pepper slices, orange pepper slices, and onion on a large sheet pan with sides. Drizzle with the Italian seasoning, olive oil, and season with salt and pepper. Toss together and make sure everything is coated with the oil and seasonings.
  3. Spread the sausage and peppers out on the pan and bake at 350 degrees for 20 minutes or until the sausage is no longer pink in the middle.
  4. Optional: Place the sausage under the broiler for a minute or two after baking to brown the sausage and char the peppers a bit.

Notes

Use enough olive oil to coat all of the vegetables and sausage. You may need to use a bit more depending on how much sausage you use and how big your peppers are.

Use Italian seasoning to taste. If you’re eating the sausage and peppers as is, you may want to use a bit more. I usually use a little less because I’m adding the sausage and peppers to other dishes and I don’t want the Italian seasoning competing with other flavors I might be using.

shouldn’t you poke the sausages with a fork so they don’t burst?

I always poke them with a fork about 4 times on each side. It lets the juices get out into the olive oil easier, to add to the flavor of the resulting sauce.

Once, I forgot to poke them. They didn’t explode. The sausages were a bit moister/greasier inside, rather than the drippings escaping into the sauce. But it came out fine.

I slice the sausages at an angle after, about 4 pieces per sausage. Looks nicer and releases the juices further for day one, then lets the remaining pieces take on the sauce for subsequent days (if any!). They marinade in the juices an are even better the next day!

Me either my air conditioning broke and didn’t want to stand in front of the stove last time I tried cooking sausage in the oven I fell asleep and burnt them for about 3 hours so I tried it when I wasn’t three sheets to the wind and they turned out absolutely wonderful I roasted red peppers first added green yellow and orange peppers with it and it was fantastic roasting Peppers first is the way to go with any dish
