Hi! I have a real treat for you today. If you love apple pie or apple crisp, you won’t believe how easy it is to make a baked apple that tastes just as good in only about five minutes. It’s better for you too, so much better that you can even eat it for breakfast! I bring you: The Microwave Baked Apple topped with Greek Yogurt and Granola!

Remember when I told you I ate three helpings of pumpkin pear cobbler in one day? Well, I ate two of these baked apples in a row for lunch yesterday. I couldn’t help it! First of all, they are flippin’ delicious. Second of all, I ended up making two for the video and photos. I was home alone, and do you think I was going to throw one away? Heck no!

The good news is, these baked apples are pretty good for you (although they don’t taste that way at all). There is no added sugar since the fruit, yogurt, and granola have plenty of sweetness. The Yoplait Greek 100 is reduced sugar, and the yogurt and Nature Valley granola I used are packed with protein too. This is one of those times when you can eat something that tastes like dessert for breakfast with zero guilt!

Right now you can get some seasonal Yoplait flavors at Walmart including Yoplait Greek 100 Caramel Apple, which would be SO good in this recipe! I used vanilla to show you how to make this warm, simple treat any time of year, but definitely stock up on the seasonal flavors while you can.   1. Peel and core apples, and slice the bottom off each one. Sprinkle each with cinnamon, and rub it all over the outside and inside.
  2. Place apples in microwave-safe bowls, and heat in microwave on full power for three minutes.
  3. Scoop half of the yogurt into the center of each apple, and top with granola. Enjoy!
