These fun and easy Pizza Muffins make for a great meal or snack!
We have been implementing some new house rules at Weary Chef HQ this past week, a big one being reducing the mania at bedtime. I have always leaned towards the “kids need to express themselves and have fun” camp, while my husband is more on the “no running or yelling or acting like a wild animal in the house” team. I could no longer make much of an argument for running wild indoors after it resulted in this last week:
That’s a broken clavicle all right. While I still don’t want to stifle their spirits, we have decided that there need to be some safety rules like not going completely berserk at the end of the day because people can get hurt. (This is getting to the part about food very soon.) To motivate and reward the kids for going along with this, I offered a Friday Movie Party if they could stay calm at bedtime all week. Movie Party means eating dinner in the living room while watching TV, which is a big treat. The Tall One was thrilled about this policy and happy to comply. The Short One doesn’t exactly know what I’m talking about, but if his older brother stays calm, he will follow suit. I’m happy to report that the first week was a success, largely due to the fact that the pain of the fall is still all too fresh in The Tall One’s memory, but hopefully we can build habits now that will stick around even after he’s recovered.
The party started with some appetizers:
Next up was the main course: pizza muffins. We loved these little guys, especially because they are so customizable and don’t contain tomato sauce, which The Tall One usually won’t eat. Use your own stir-ins and serve with marinara for dipping if desired. We tried crumbled turkey bacon and olives this time. Big hit!
Preheat oven to 400 degrees F. Generously spray muffin tin with cooking spray and set aside.
In large bowl, stir together flours, baking powder, garlic powder, onion powder, oregano, and salt.
In a medium bowl, whisk together eggs and milk, and stir into dry ingredients just until combined. Mix in 1 c. cheese and additional ingredients.
Scoop dough into muffin tin, and sprinkle a small amount of cheese over there top of each muffin. Bake in preheated oven for 18-20 minutes, or until golden brown. Allow to cool in pan for a few minutes, then serve warm with marinara for dipping if desired.
