Cherry Chocolate Almond Energy Balls
Ingredients

  • 1cup rolled oats,

  • 1/3cup chia seeds,

  • 1/3cup unsweetened shredded coconut,

  • 1/2cup almond butter,

  • 1/4cup ground flax seed,

  • 1/2cup dried cherries,

  • 1/3cup honey,

  • 1teaspoon vanilla extract,

  • 1/3cup finely chopped dark chocolate,

Instructions
  1. Combine all ingredients in mixing bowl and stir together until combined.

  2. Cover with plastic wrap and place in refrigerator for 30 minutes – 1 hour.

  3. Use a small cookie scoop (tablespoon size) to scoop the mixture into a rough ball shape, then use hands to form into round balls.

  4. Store energy balls in an airtight container in the refrigerator, or freeze.
