The school year is already half over (what!?), and if your kids are like mine, they are getting pretty bored with the same old, same old in their lunches. It’s time to spice it up! Except, I can’t use actual spice because my kids don’t eat spicy food, but you know what I mean. Today I’m going to show you how to add a whole bunch of fun to lunch boxes with very little effort. Check out these turkey sushi sandwiches!

When I showed these to my oldest, he really thought they were sushi. He could see that it wasn’t seaweed, but he thought the cheese was rice. I’m not sure what my youngest’s reaction was because it was a surprise for school lunch. He brought home an empty lunchbox, so I think that means he liked it!

All you need for these fun sandwich rolls is large tortillas (preferably spinach for the green color), shredded mozzarella cheese, Hillshire FarmĀ® turkey lunch meat, and shredded carrots. You’ll also need a smidgen of cream cheese or mayo to hold them together and ranch dressing for dipping if desired.

Believe me when I tell you that these sandwiches are really quick and simple to make. I buy pre-shredded carrots and cheese to skip that prep time, and then it doesn’t really take much longer to make a sushi sandwich than a regular sandwich. You could also try avocado and/or cucumber sticks in place of the carrots. Have fun with it, and I know your kids will too!

Turkey and Cheese Sushi Sandwich Rolls

Instructions

  1. Cut edges of tortilla to make more of a square shape than a circle. Spread cream cheese along the far edge. It just needs to cover about 1/2″ strip of tortilla.
  2. Spread mozzarella evenly overly tortilla, starting where the cream cheese ends and leaving about a two-inch strip on the end closest to you uncovered.
  3. Arrange turkey slices on that uncovered strip closest to you, and arrange carrots on top of the turkey.
  4. Now it’s time to roll! The key is to roll it very tight. Fold over the end with the turkey, and roll it tightly, squeezing it toward you as you fold/roll. Continue rolling and squeezing the tortilla, finishing by pressing the rolled sandwich down so the cream cheese “glues” it closed.
  5. Next, use a sharp knife to cut your roll into 1/2″ pieces as shown. Serve with ranch dressing for dipping if desired.
