Chicken and Wild Rice Salad: A Hearty, Savory Dinner Salad
This easy, filling salad is filled with chicken, rice, fruit, and avocado.
long grain and wild rice mix
with seasoning packet (like Rice-a-Roni)
cooked, shredded chicken
(I used rotisserie chicken)
diced into bite-sized pieces
flesh removed and diced
prepared poppy seed dressing
(I used a blend of baby spinach and romaine.)
Cook rice according to package directions, and allow to cool. (You could do this the day before and cool it in the refrigerator until you are ready to make your salad.)
Gently toss all ingredients together and serve. Doesn’t get much easier than that!
