Bake pie crust according to package directions for one-crust pie. (To skip this baking step, use a pre-made graham cracker crust.) Allow to cool.
Gently spread a thin layer of softened cream cheese all over the bottom and up the sides of the pie crust.
Cut off green stems and halve, quarter, or slice strawberries. Place cut strawberries in prepared pie crust. (You can arrange them carefully into a pattern or just pour them in. It will taste great either way!)
Whisk together sugar and cornstarch in a small saucepan. Slowly stir in water, whisking the whole time to avoid lumps. Heat over medium heat until boiling, stirring constantly. Boil one minute and remove from heat.
Whisk gelatin into the sugar mixture for two minutes. Allow to cool to room temperature.
Pour cooled gelatin over strawberries in pie crust. Refrigerate for at least two hours before serving. Top with whipped cream if desired.
