Mediterranean Pita Pizzas
These easy pita pizzas boast the flavors of goat cheese, olives, tomatoes, and feta. Great served warm or at room temperature.

  1. Preheat oven to 375 degrees F.
  2. Spread 2 tsp. olive oil evenly over one side of each pita. Sprinkle with a pinch of kosher salt and a couple pinches of oregano.
  3. Evenly place goat cheese, tomato, pepperoncini, and olive slices over each pita. Sprinkle feta over the top of each pizza.
  4. Place pizzas on a baking sheet, and bake in preheated oven for approximately 10 minutes, until feta begins to brown and pita isn’t too crispy. Slice each pizza into four pieces and serve.

Adjust amounts to taste. This would also be great with hummus spread on the pita instead of or in addition to the olive oil!
