- 2 large bell peppers (any color)
- 1 cup of your preferred type of rice (cooked)
- 1/2 lb. 93% Lean ground turkey
- 1 clove garlic (minced)/ one teaspoon garlic powder
- 1 small onion (diced)
- 1 cup sharp cheddar cheese (shredded)
- 1 8 oz. can of crushed tomatoes
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Firstly, heat the oven to 350 degrees. Also, prepare one cup of rice and set it aside.
- Remove the peppers’ tops. Next, trim the bottoms to make them sit flat in the skillet, remove the seeds, and give them a good rinsing. The peppers should be boiled for 5 minutes in a big pan, then removed from the water and placed upside down on paper towels to dry.
- After, olive oil, garlic, and onion should all be added to a big pan and cooked until tender.
- Add the turkey and fry until well browned.
- Stir in the rice, crushed tomatoes, Italian seasoning, salt, pepper, and 1/2 cup of shredded cheese.
- Finally, place the peppers with a sprinkle of salt over them, filled equally with the mixture, in your preferred baking dish or 10-inch cast iron pan that has been gently buttered.
- Cook for 25 to 30 minutes uncovered. Remove the tops of the peppers, sprinkle the remaining cheese over them, and bake for a further five minutes, or until the cheese has melted.
