- 1/2 cup Soy Vay Toasted Sesame Dressing
- 2 tablespoons seasoned rice vinegar
- 1 cup shredded carrots
- 6 ounces snow peas cut into bite-sized pieces
- 1 cucumber sliced very thin
- 4 green onions sliced
- 12 ounces Barilla®Pronto™ pasta
- 2 tablespoons soy sauce
- 3/4 pound boneless, skinless chicken breasts cut into bite-sized pieces
Instructions
- In a large bowl, toss together Soy Vay dressing, vinegar, carrots, snow peas, cucumber, and green onions. Allow to marinade at least 15 minutes (while you cook the pasta and chicken).
- While vegetables soak, coat chicken with soy sauce in a small bowl. Cook pasta according to package directions and remove from heat to cool slightly.
- Stir cooked pasta into vegetables, rinse skillet, and heat it over medium-high heat. Spray with cooking spray, and stir fry chicken for 5-7 minutes until cooked through. (You can cook the chicken while the pasta cooks to save time but use another pan, whichever you prefer.)
- Stir cooked chicken into pasta salad. Serve slightly warm right away, or cover and refrigerate up to 24 hours until ready to serve.
