- 2 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups cherries pitted and cut in half
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup vegetable oil
- 2 eggs
- 1/2 cup low-fat plain yogurt (or sour cream)
- 1/2 cup sugar
- 1 teaspoon vanilla
Instructions
- Preheat oven to 400 degrees F. Spray a muffin tin with cooking spray or grease with butter or shortening. Set aside.
- In a large bowl, stir together flour, baking soda, baking powder, and salt. Stir cherries and chocolate chips into the flour mixture.
- In a medium bowl, whisk together oil, eggs, yogurt, sugar, and vanilla. Stir wet ingredients into dry just until mixed. Use a spring-loaded disher or a 1/3 cup measuring cup to scoop batter evenly into muffin tin.
- Bake in preheated oven 15-18 minutes or until tops are golden brown. Cool on a wire rack.
Notes
- You can use your favorite combination of flour. All white flour will give the lightest result, but you could combine white and whole wheat flours or spelt and gluten-free flours (as I did).
- You can use fresh or thawed frozen cherries in this recipe with good results.
