- 16 oz. cream cheese softened (I used reduced fat)
- 1/2 c. sugar
- 1/2 tsp. vanilla
- 2 eggs
- 1/4 c. mini chocolate chips
- 1 prepared 9-inch chocolate cookie crust or make your own
- 1/3 c. strawberry jelly
Instructions
- Place shallow dish filled with about 1/2″ water in the bottom of your oven. Preheat oven to 350 degrees F.
- Mix cream cheese, sugar, and vanilla with an electric mixer on medium speed until smooth. Scrape sides and bottom of the mixing bowl, add eggs, and mix on medium speed until combined.
- Add chocolate chips, and stir on lowest speed to incorporate chocolate. Pour cheesecake mixture into prepared crust.
- Microwave jelly for about 15 seconds, and stir. It will have a liquidy consistency.
- Drop dollops of jelly evenly over the cheesecake, then gently swirl into a pretty pattern with a butter knife.
- Bake in preheated oven for 40 minutes or until center is almost set. Allow to cool at room temperature for about 30 minutes, then place in refrigerator for at least 3 hours before serving.
