This Chocolate Strawberry Cheesecake is as easy as it is delicious!
My oldest son turned seven the day after Thanksgiving, which meant a second day of feasting to celebrate his birthday. We enjoyed a shrimp boil for lunch, the traditional birthday meal in our house, and we were stuffed to the gills again!
He had his big birthday party the weekend before, when he had a chocolate and whipped cream birthday cake, so for his actual birthday The Tall One requested strawberry cheesecake. We all thanked him for the idea once we tasted this cool, creamy dessert. It uses strawberry jam, so it’s easy to make any time of year. I’m sure you will enjoy this cheesecake with the flavor of chocolate-covered strawberries!

Ingredients

16oz. cream cheese softened (I used reduced fat)
1/2c. sugar
1/2 tsp. vanilla
2 eggs
1/4 c. mini chocolate chips
1 prepared 9-inch chocolate cookie crust or make your own
1/3c. strawberry jelly
Instructions
Place shallow dish filled with about 1/2″ water in the bottom of your oven. Preheat oven to 350 degrees F.
Mix cream cheese, sugar, and vanilla with an electric mixer on medium speed until smooth. Scrape sides and bottom of the mixing bowl, add eggs, and mix on medium speed until combined.
Add chocolate chips, and stir on lowest speed to incorporate chocolate. Pour cheesecake mixture into prepared crust.
Microwave jelly for about 15 seconds, and stir. It will have a liquidy consistency.
Drop dollops of jelly evenly over the cheesecake, then gently swirl into a pretty pattern with a butter knife.
Bake in preheated oven for 40 minutes or until center is almost set. Allow to cool at room temperature for about 30 minutes, then place in refrigerator for at least 3 hours before serving.
