Ingredient List
As you’ll see in the list below, the ingredients are super affordable and the list is quite small. In addition, keep in mind that the type of mushroom you choose for this gravy can be adapted to your preferences. Once, I even made vegan gravy using Pleurotus mushrooms, if you believe it or not! They were the only ones I had in my fridge and some unexpected vegan guests were just announced at that moment. The result was quite impressive regarding the little trick I did.
4 ounces baby portobello mushrooms – you can also use any kind of mushrooms you find- (finely chopped);
1/2 cup onion (finely chopped);
1/2 cup extra-virgin olive oil;
4-5 cup vegetable stock (preferably homemade);
1 teaspoon soy sauce;
1/2 teaspoon kosher salt;
1/2 teaspoon black pepper.
Vegan Mushroom Gravy Step-by-Step Recipe
Now, that you have all the needed ingredients on hand, it’s time to find out what you should do. This is one of my famous 5-step recipes! This is one of the first recipes I learned from my grandma. Even though she is a huge meat lover, mushrooms were her one true love. She made the best stuffed mushrooms I have ever tasted!
First of all, in a large skillet, heat the olive oil over medium-high heat.
Next, add the chopped onion and mushrooms to the heated olive oil. Cook them, stirring, until well browned, 8 to 10 minutes.
Sprinkle in flour and cook, stirring, until golden brown, 3 to 5 minutes.
Then, slowly whisk in vegetable stock, a little at a time, until you form a smooth sauce. Simmer for 2 to 3 minutes until thickened.
Finally, season with soy sauce, salt, and black pepper and remove from heat.
Moreover, when it comes to storing your leftover mushroom gravy, use an airtight container and keep it in the refrigerator for up to 5 days.
