Chicken Supreme is a delicious pan seared chicken breast recipe with a rich bacon-mushroom cream sauce. It is easy to make and tastes luxurious. This dish is perfect for a busy weeknight dinner when you want to spoil yourself.
What is a Chicken Supreme?
Chicken Supreme is a specific cut of skin-on, boneless chicken breast where the wing, up to the first joint, is still attached. A chicken supreme is the same as an airline chicken breast and a Statler chicken breast.
This cut of chicken is very popular in restaurants because the “drumette” or wing joint gives the breast a more elevated look. For this recipe I use a regular boneless chicken breast because supreme or airline chicken breasts can be hard to find at most grocery stores.
Why I love this fancy Chicken Supreme recipe
Although I have adapted this recipe to use a regular chicken breast the end result is a very elevated chicken dinner that is sure to impress. I love making this recipe because it uses less than 10 ingredients, takes only 30 minutes and is always a crowd pleaser.
Ingredients in Chicken Supreme
This recipe is super simple and can be made with only 9 ingredients. The most important thing is to get skin-on chicken breasts and heavy cream and not half and half.
Skin-on, boneless chicken breasts: if you can find airline chicken breasts at your grocery store, those are the best but otherwise you want boneless and skin-on. If you get bone-in or split breasts you will need to increase the cooking time.
Onion: the onion adds more flavor to the dish but is not overwhelming
Garlic: the garlic adds nice flavor but is subtle like the onion
Bacon: the crispy bacon adds a little smoky flavor and crispy texture
White Wine: you want to use a dry white wine like sauvignon blanc. If you do not have white wine you can use an extra ⅓ cup of chicken stock and 1 tablespoon of white wine vinegar or 1 tablespoon of lemon juice. White wine adds flavor and some acidity to the dish.
Chicken Stock: the chicken stock helps make the sauce extra flavorful.
Heavy Cream: the heavy cream gives the dish its luxurious and rich flavor.
Mushrooms: the mushrooms give the sauce a nice earthy flavor
Lemon Zest: a little lemon zest at the end brightens up the dish and makes the flavors pop!
How to Make Chicken Supreme
This recipe can be done quickly and only takes a few steps. I like to finish cooking the chicken in the oven but the entire dish can be done on the stovetop. The trick to this recipe is getting a nice sear so the skin is browned and crispy.
Dice the onion and garlic.
Dice the bacon
Cook the bacon with a little olive or vegetable oil, about 1 tablespoon over medium heat until fully cooked and slightly crispy. Remove the bacon from the pan with a slotted or wooden spoon and reserve the bacon fat in the pan.
Season the chicken with a little salt and pepper and then place in pan skin side down over medium high heat
Sear the chicken breasts for about 3 minutes until the skin is brown and crispy and then flip over. Make some space in the pan so you can cook the vegetables around the chicken.
Add the diced onion to the pan and cook for 2 minutes until soft
Add the mushrooms to the pan and cook for 3 minutes, it is ok if they are piled high. Gently mix the mushrooms every 30 seconds.
Add the chopped garlic and mix
Add the white wine and allow to come to a simmer and reduce by half about 2 minutes
Add the chicken stock and allow to come to a simmer and reduce by half about 2 minutes
Add the heavy cream and allow to come to a low simmer
Place the pan in the oven Bake at 350 for 10 minutes and sauce has thickened
Remove the pan from oven and top with the Zest of one lemon
Make your chicken dinner even tastier with these tricks
Top the finished dish with some chopped parsley, sage and chives. I know it is a few extra ingredients and extra work but it really takes the dish to the next level
If you want an even richer sauce you can add ¼ cup of grated parmesan cheese. Just mix in the cheese right after adding the cream.
Add ¼ cup of chopped sundried tomatoes and a tablespoon of dried oregano after adding the garlic for a more Italian flavor.
Simple ingredient substitutions for Chicken Supreme
White wine can be substituted with ⅓ cup of chicken stock and 1 tablespoon of white wine vinegar or 1 tablespoon of lemon juice
Chicken stock can be substituted with vegetable stock
Chicken breasts can be substituted with skin-on chicken thighs
Mushrooms – you can use crimini, button, or portobello mushrooms
