Tropical Banana Muffins

Have you tried baking with yogurt? I love adding Greek yogurt to my baked goodies because it makes them so flavorful while adding protein too. That’s why I was excited to hear that Fleischmann’s Simply Homemade just released three new baking mixes that were created specially for use with Greek yogurt! Now we don’t have to try to figure out how much yogurt to add to our muffins because they’ve figured it out for us. Thanks, guys!

My family was lucky enough to try out all three of their new baking mix flavors: lemon poppyseed, raspberry, and banana. Lemon poppyseed is my oldest’s very favorite flavor of muffin, so he couldn’t wait to try them. I love baking mixes because they are easy for him to do pretty much on his own without me freaking out about measuring and messes. He made the lemon muffins with lemon Greek yogurt, and they turned out perfectly tart and delicious.

For these banana muffins, I decided to add a tropical spin with coconut and pineapple. I’ve told you how I feel about coconut, so that probably doesn’t surprise you. These muffins turned out unbelievably moist and tasty, and they are so easy that you can even make them on a busy weekday morning. My boys get tired of eating cereal and frozen waffles all the time. They are always excited to have a freshly baked muffin for breakfast!

Be sure to keep an eye out for the Fleischmann’s Simply Homemade mixes in the baking aisle at your grocery store.   • 13.4 ounces Fleischmann’s® Simply Homemade® Banana Muffin and Bread Mix
  • 5.3 ounces greek yogurt coconut flavored
  • 2 large eggs
  • 1/2 cup coconut oil (use liquid coconut oil, or heat solid oil in microwave just long enough to melt)
  • 1/4 cup water
  • 1 cup pineapple chunks drained
  • 1/4 cup unsweetened coconut flakes or more to taste

Instructions
  1. Preheat oven to 350 degrees F. Spray a muffin tin liberally with cooking spray and set aside.
  2. Stir together all ingredients until combined, making sure to completely break up and stir in egg yolks.
  3. Use a spring-loaded disher or a measuring cup to evenly fill muffin tins about ⅔ full.
  4. Bake in preheated oven for 15-20 minutes or until toothpick inserted into center of muffin comes out clean. Cool in pan for a few minutes, then carefully remove from pan while still warm.
