Tropical Banana Muffins

Youโ€™re in for a treat today with these Tropical Banana Muffins made with coconut, pineapple, and Greek yogurt. Thank you to Fleischmannโ€™sยฎ Simply Homemadeยฎ for sponsoring todayโ€™s post and creating the mix I used in the recipe.

Banana, coconut, and pineapple muffins are made easy and delicious with Greek yogurt and baking mix!

Have you tried baking with yogurt? I love adding Greek yogurt to my baked goodies because it makes them so flavorful while adding protein too. Thatโ€™s why I was excited to hear that Fleischmannโ€™s Simply Homemade just released three new baking mixes that were created specially for use with Greek yogurt! Now we donโ€™t have to try to figure out how much yogurt to add to our muffins because theyโ€™ve figured it out for us. Thanks, guys!

My family was lucky enough to try out all three of their new baking mix flavors: lemon poppyseed, raspberry, and banana. Lemon poppyseed is my oldestโ€™s very favorite flavor of muffin, so he couldnโ€™t wait to try them. I love baking mixes because they are easy for him to do pretty much on his own without me freaking out about measuring and messes. He made the lemon muffins with lemon Greek yogurt, and they turned out perfectly tart and delicious.

For these banana muffins, I decided to add a tropical spin with coconut and pineapple. Iโ€™ve told you how I feel about coconut, so that probably doesnโ€™t surprise you. These muffins turned out unbelievably moist and tasty, and they are so easy that you can even make them on a busy weekday morning. My boys get tired of eating cereal and frozen waffles all the time. They are always excited to have a freshly baked muffin for breakfast!

Be sure to keep an eye out for the Fleischmannโ€™s Simply Homemade mixes in the baking aisle at your grocery store. They also have cornbread, pretzel, and sourdough mixes, and they all use real simple ingredients found in your pantry or fridge. Each mix is only around $3, so they are a value too! You can follow Fleischmannโ€™s Simply Homemade on Facebook to keep up with their new products and get more recipe ideas.

Thank you, Justine!! That means so much to me coming from you because all your photos are incredible! I got the 100mm macro lens, and it has made me change my setup since I have to be farther away. Backlighting my photos was a happy accident :)
