I’m such a sucker for anything involving coconut. Smoothies, curries, shampoos, lotions, you name it. I find the taste and smell irresistible! I even used it in my hair color mix last time around. As it turns out, you can mix henna with coconut milk to condition your hair while it colors. I swear, coconut is good for everything!

Have I told you that I started coloring my hair naturally with henna a few months ago? It’s a bit of a weird ritual to do the coloring, but I love it. It’s all natural, inexpensive, and actually good for your hair. In fact, I’m sitting here looking silly with a shower cap on right now while the henna and indigo work their magic on my roots. Sorry for the tangent. Let’s get back to the marinade. Just look at this chicken and salmon after marinating in seasoned coconut milk. It is SO moist and flavorful, and this marinade couldn’t be much easier to mix up. The coconut flavor is actually pretty subtle, but it does add a bit of tropical flavor. This is one recipe that both of my picky kids love too. You can eat this chicken or salmon on its own or use it to fill tacos or top a salad. I grilled the chicken and cooked the salmon on my stovetop, but I know you’ll love it however you decide to cook it!

  • 1 cup coconut milk
  • juice of one lime
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon chopped fresh cilantro (or 1 teaspoon dried cilantro)
  • lime wedges for serving optional
  • 2 pounds chicken or salmon

Instructions
  1. Combine all ingredients, and add your choice of fish or chicken. Stir to coat.
  2. Marinade for at least 30 minutes before cooking on the grill or in a hot skillet. Serve with lime wedges if desired.
Recipe Notes

If you use the whole can of coconut milk, add an extra teaspoon of soy sauce and fish sauce.

    Oh my gosh this brings back memories from when I’d use henna on my hair! I never knew I could use coconut milk too! This marinade could easily be my go to. I bet it taste fresh and delicious!

    We use a lot of coconut oil but I’ve never tried coconut milk for conditioning. I will have to try this recipe the next time I make lime chicken tenders for my family!

      I’ve slathered my hair with a lot of different kinds of oil for conditioning ;) I heard recently that coconut oil is a great eye makeup remover. I need to try that. Thank you, Tonia!!
