Instructions
  1. Add rice, chicken broth, garlic powder, and a few grinds of black pepper to a small saucepan. Bring to a low boil over medium-high heat. Stir, cover, and reduce heat to low.
  2. Cook rice 20 minutes (adjust cooking time according to package directions if using brown rice or quinoa). When done stir in cheese and green onions before serving.

    I made this tonight and my husband and I really enjoyed it! I was so tired of mashed potatoes…and this was a nice change. Only thing I did differently was I added a little gouda with the cheddar…I’m on a weird Gouda kick. It was so good! I’ll definitely make this again!

    After the first mouthful, my husband said ‘The rice is really good’. This was a mouthful from a man of few words when it comes to dinner fare! I will admit to adding more cheese and using my rice cooker instead of a pan do I could be free to do some other things. I used low-sodium chicken broth and a fair amount of pepper, since I’m on a pepper kick right now. I made a double and this will be great with the rotisserie chicken that’s about to go on the grill.

    Are you substituting the green onions in place of chives because they are two different items?

    I made a vegan version of this using vegan chicken broth and vegan cheese and it was amazing! Thanks for the wonderful recipe, I will definitely be making this one again and again. I can think of so many other things to add to this (peas, broccoli, and bacon bits just to name a few) to change it up a little.

    I am always looking for side dishes. Funny but I don’t even think about rice most of the time.
    I like rice. Conditioning from home—–and that was so long ago the world was flat.
