To help tenderize the beans, blanch them in a large pot of salted water. Believe it or time, not, blanching helps the beans retain their color. However, if you don’t have a lot of time, you can sauté green beans without blanching; also, skip this step if you want crisper beans.

So, keep in mind that this ingredient list is perfect for 2 servings. However, if you’d like to serve this Chinese side dish recipe to more than 2 people, feel free to adapt the quantities to your guest number.
Another essential tip I have for you is to have prepared all the necessaire ingredients before getting started. Considering we’ll cook these Chinese beans at high heat, we won’t have time for searching for a missing ingredient, or for mincing the ginger.

Make sure your green beans are thoroughly dry. (If vegetables aren’t dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) That’s how they should look like when they’re cooking.
