- 1 pre-made pie crust
- 3 tablespoons cream cheese softened (reduced fat OK)
- 1 quart fresh strawberries
- 3/4 cup sugar
- 2 tablespoons corn starch
- 1 cup water
- 1 3–ounce packet strawberry gelatin
- whipped cream or Cool Whip optional (but encouraged)
Instructions
- Bake pie crust according to package directions for one-crust pie. (To skip this baking step, use a pre-made graham cracker crust.) Allow to cool.
- Gently spread a thin layer of softened cream cheese all over the bottom and up the sides of the pie crust.
- Cut off green stems and halve, quarter, or slice strawberries. Place cut strawberries in prepared pie crust. (You can arrange them carefully into a pattern or just pour them in. It will taste great either way!)
- Whisk together sugar and cornstarch in a small saucepan. Slowly stir in water, whisking the whole time to avoid lumps. Heat over medium heat until boiling, stirring constantly. Boil one minute and remove from heat.
- Whisk gelatin into the sugar mixture for two minutes. Allow to cool to room temperature.
- Pour cooled gelatin over strawberries in pie crust. Refrigerate for at least two hours before serving. Top with whipped cream if desired.
