Ingredients
- 1 1/2 pounds side of salmon (approximate weight)
- 3 tablespoons butter melted
- 1 tablespoon honey
- 3 cloves garlic minced
- juice from one lime
- 1 1/2 teaspoons chili powder
- salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil, and place the salmon, skin side down, on top of it.
- In a small bowl, whisk together the butter, honey, garlic, lime juice and chili powder and pour this over top of the salmon, brushing it all over. Sprinkle generously with salt and pepper and turn up the edges of the foil to keep all the butter mixture in.
- Bake for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork. Broil on high for 3-5 minutes to brown the top as much as you like, watching closely so you don’t overdo it.
Notes
If you would like, you can replace the butter with olive oil – it works just as well, just changes the flavor slightly.
You can also grill this salmon instead of baking it – prepare it on a foil lined baking sheet the same way, then slide the prepared fish on the foil onto the preheated grill and grill it for about 15 minutes or until it is opaque and flakes easily with a fork. It will vary a bit depending on the temperature of your grill (I try to keep it around 400F) and the thickness of your fish.
