- 1 tbsp. olive oil
- 1 lb. boneless, skinless chicken breasts cut into bite-sized pieces
- 1/2 tsp. kosher salt
- freshly ground black pepper
- 1 c. shredded carrots I use pre-shredded to save time
- 2 cloves garlic minced or crushed
- 32 oz. reduced-sodium chicken broth
- 1 c. star-shaped pasta or substitute alphabet pasta or orzo
Instructions

Add olive oil to a large pot, and heat over medium-high heat. Add chicken to hot oil. Sprinkle with salt and a few grinds of pepper, and stir fry until chicken is no longer pink, 5-8 minutes.

Stir in carrots and garlic, and cook, stirring frequently, 2 minutes longer. Pour in chicken broth and bring to a boil.

Add pasta, and continue boiling for 7 minutes or recommended cooking time on pasta package. Soup will be ready to serve immediately, but please let kids’ portions cool a bit to avoid burns.
