- 8 ounces reduced-fat cream cheese softened
- 14 ounces sweetened condensed milk
- 1/2 cup fresh lime juice divided
- 1 teaspoon unflavored gelatin
- 1 graham crust store-bought or homemade
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions

Combine cream cheese, condensed milk, and 1/4 c. lime juice on medium speed with an electric mixer until combined well.

Heat 1/4 c. lime juice in the microwave for about 30 seconds, or until steaming hot. Add gelatin, and stir until dissolved. Turn mixer back on, and drizzle warm juice/gelatin mixture in slowly until thoroughly incorporated.

Pour cream cheese mixture into prepared pie crust, cover with plastic, and chill for 3-4 hours.

Before serving pie, using the wire whisk attachment of your mixer, mix whipping cream on medium-high speed until it starts to thicken. Add powdered sugar, and continue mixing until stiff peaks form. Spread whipped cream over the top of the pie, and serve.
Notes
This pie will keep in refrigerator at least 3 days (if you actually have leftovers). To save time, you can substitute Cool Whip for the real whipped cream.
