This quick and flavorful fried rice recipe can be made in under 20 minutes and is a versatile dinner that uses what you have on hand!

Instructions

  1. Stir pork and teriyaki sauce together, and allow to marinade for at least 30 minutes or up to 24 hours. (If you don’t have time to marinate, you can still make the recipe. The meat just won’t be as flavorful.)
  2. Heat oil in a large skillet over medium-high heat. Add meat with sauce, onion, and carrots. Stir fry until meat is cooked through, 8-10 minutes.
  3. Stir in rice, greens, and soy sauce. Cook and stir until greens are wilted. Push rice mixture over to one side of the pan.
  4. Spray the exposed part of the pan with cooking spray, and add two eggs there. Scramble eggs with your spatula while they cook. When eggs are fully cooked, stir into rice. Turn off heat and serve with Sriracha if desired.
