- 1 pound boneless pork loin cut into bite-sized pieces
- 1/2 cup prepared teriyaki sauce
- 1 teaspoon cooking oil
- 1 red onion chopped
- 1 cup sliced carrots
- 1 1/2 cups cooked rice (white or brown)
- 2 handfuls sliced broccoli rabe or baby bok choy
- 2 teaspoons soy sauce
- sriracha hot sauce to taste
Instructions

Stir pork and teriyaki sauce together, and allow to marinade for at least 30 minutes or up to 24 hours. (If you don’t have time to marinate, you can still make the recipe. The meat just won’t be as flavorful.)

Heat oil in a large skillet over medium-high heat. Add meat with sauce, onion, and carrots. Stir fry until meat is cooked through, 8-10 minutes.

Stir in rice, greens, and soy sauce. Cook and stir until greens are wilted. Push rice mixture over to one side of the pan.

Spray the exposed part of the pan with cooking spray, and add two eggs there. Scramble eggs with your spatula while they cook. When eggs are fully cooked, stir into rice. Turn off heat and serve with Sriracha if desired.
