Creamy Rasta Pasta with Jerk Chicken

  1. Cook pasta according to the package instructions, and take remember we need “al dente” pasta.
  2. Cube the chicken breast, toss it in jerk seasoning and oil and cook it until it’s golden and cooked through. Then remove it from the pot, and set it aside to add later.
  3. Add the vegetable oil to a heavy-bottomed pot, and saute bell peppers with green onions.
  4. Next, add the minced garlic to the peppers and cook it until it’s fragrant.
  5. Add jerk seasoning to the pot. Stir.
  6. Add heavy cream, chicken, and vegetable stock to the pot. Simmer for a few minutes or until the sauce thickens.
  7. Add the parmesan to the sauce and then mix in the pasta.
  8. Garnish with chopped chives and green onions, and serve!
