Dill Rice Pilaf

This simple rice dish is lightly flavored with dill and peas. It goes especially well with chicken or fish.

  1. Heat oil over medium heat in a medium pot. Add onion and sauté until tender, about 3 minutes. Add garlic and sauté one minute longer.
  2. Stir in rice, and sauté for about 3 minutes, stirring constantly. Add broth, salt, pepper, dill, and parsley. Bring to a low boil, then reduce heat to simmer and cover. Cook 10 minutes.
  3. Stir in frozen peas, and simmer an additional 10-12 minutes, or until liquid is absorbed.
