- 3/4 pound boneless, skinless chicken breasts
- seasoned salt
- 20 red or green grapes diced
- 1 apple diced
- 1/4 cup roasted, salted sunflower seed
- 1/2 cup reduced-fat mayonnaise (more or less to taste)

Lightly season both sides of the chicken with seasoned salt. Spray a skillet with cooking spray, and heat over medium high heat. Cook chicken in hot skillet until heated through (approximately 15 minutes). Transfer chicken to cutting board.

While the chicken cooks is a great time to dice your grapes and apples. Then, use two forks to shred the cooked chicken. Use a chef’s knife to chop the shredded chicken into smaller pieces.

Add chopped grapes, apple, and chicken to a medium bowl. Add mayonnaise and sunflower seeds. Stir in mayonnaise to desired consistency. Serve immediately or store in refrigerator until ready to serve.
Notes
- All measurements are approximate. No harm will come from adding a little more or less of any ingredient.
- Grilled, leftover, or rotisserie chicken would all work great too!
