Healthy Apple Cinnamon Bread with Fresh Apples

This apple bread recipe comes together with basic baking ingredients like butter, sugar, flour, and eggs. Also, it is super quick and easy to make, being a yeast-free loaf.

  • 1 apple Granny Smith or green
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon powder

Cinnamon Apples

  • 2 cup diced apples skin on
  • 1 teaspoon cinnamon powder
  • 2 tablespoon granulated sugar

Bread Batter

  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ginger grated
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 1/2 cup yogurt
  • 2 eggs
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract

Instructions

  1. First of all, preheat the oven to 200°C/390°F. Also, position the shelf in the middle of the oven.
  2. Spray a loaf pan with canola oil then line it with a single piece of paper leaving some overhang (that will help you easily remove the apple bread from the pan once it’s ready).
  3. Mix Cinnamon Apples ingredients in a bowl. Set aside while you prepare the batter.
  4. Then, whisk the cinnamon powder, grated ginger, flour, baking powder, and salt in a bowl.
  5. In a separate bowl, whisk sugar, yogurt, eggs, canola oil, and vanilla extract.
  6. Combine the compositions from the two bawls in a bigger one and whisk just until smooth.
  7. Next, stir the Cinnamon Apples (including all juices).
  8. Scrape the apple batter into the prepared loaf pan, and smooth the surface using a spatula.
  9. OPTIONAL: Slice one Green Smith apple and arrange the slices on top of the cinnamon apple bread. Cover with brown sugar and cinnamon powder.
  10. Bake uncovered for 60 minutes. 
  11. Then, cover the apple cinnamon bread with aluminum foil and bake for further 25 minutes. You can test if it’s ready using a toothpick. The toothpick inserted into the center of the bread should come out smooth and clean.
  12. Let it rest for 15 minutes in the pan then use the overhanging paper to remove it. Let it cool for at least 1 hour on a rack before slicing!
