- 1/2 cup butter softened
- 4 ounces reduced-fat cream cheese softened
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup molasses
- 2 cups baking mix
- 1 teaspoon ground cinnamon
- 1 tablespoon finely chopped crystallized ginger (or 1 teaspoon ground ginger)
- 1/4 cup dusting sugar optional
Instructions
- Preheat oven to 350 degrees F. Line two baking sheets with silicone mats or parchment paper.
- Cream together butter, cream cheese, and sugar with an electric mixer on medium-low or vigorously by hand. Mix in egg and molasses on low until smooth.
- Add baking mix, cinnamon, and ginger, and stir until well combined. Use a medium disher to scoop balls of dough two-inches apart on baking sheet. Drop a pinch of dusting sugar on top of each cookie.
- Bake in preheated oven for 12-15 minutes. Halfway through baking, use a spoon to press the cookies down in the center into a flatter shape. Cool cookies on baking rack before storing.
