Baking Mix Soft Molasses Cookies

These delicious soft molasses cookies use baking mix as a shortcut. They are perfect for the holidays or an after school treat any time!

Ingredients

  • 1/2 cup butter softened
  • 4 ounces reduced-fat cream cheese softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup molasses
  • 2 cups baking mix
  • 1 teaspoon ground cinnamon
  • 1 tablespoon finely chopped crystallized ginger (or 1 teaspoon ground ginger)
  • 1/4 cup dusting sugar optional

Instructions

  1. Preheat oven to 350 degrees F. Line two baking sheets with silicone mats or parchment paper.
  2. Cream together butter, cream cheese, and sugar with an electric mixer on medium-low or vigorously by hand. Mix in egg and molasses on low until smooth.
  3. Add baking mix, cinnamon, and ginger, and stir until well combined. Use a medium disher to scoop balls of dough two-inches apart on baking sheet. Drop a pinch of dusting sugar on top of each cookie.
  4. Bake in preheated oven for 12-15 minutes. Halfway through baking, use a spoon to press the cookies down in the center into a flatter shape. Cool cookies on baking rack before storing.
