- 1/2 onion finely chopped
- 1/2 green bell pepper finely chopped
- 1/2 teaspoon Cajun seasoning
- 1 pound ground turkey
- 1/2 cup BBQ sauce
- 8 romaine lettuce leaves
- 1/2 cup cheddar cheese shredded
Spray large skillet with cooking spray and heat over medium-high heat. Add onion, bell pepper, turkey, and Cajun seasoning. Cook until vegetables are tender and turkey is cooked through, stirring frequently and crumbling meat as it cooks.
Drain meat if desired. Stir in BBQ sauce, and simmer for a few minutes. Scoop BBQ turkey with a slotted spoon onto lettuce leaves, and sprinkle with cheese while hot. Serve immediately.
This meat mixture can be made ahead and reheated as needed, but don’t put it on the lettuce leaves until you are ready to eat.
