hi. That “hi” is so faint to try to demonstrate my level of weariness this morning. My littlest boy has taken to waking up around 4:30 in the morning lately. FOUR THIRTY. I have no idea what to do about it. We’ve tried putting him to bed later, which just makes for a more tired kid since he gets even less sleep. He complains that he doesn’t want to sleep because it takes so long and is so boring. Ugh. I don’t have to actually get up at 4:30, but he usually comes to tell me something, or I hear him in and out of the bathroom or something. Then the cat wakes up and starts meowing because he thinks it’s breakfast time. From 4:30-6:00, I’m up and down until I finally give up and get up for good.

People keep telling me that before I know it I’ll have to drag the kids out of bed and will look back and miss these days. I don’t know if I’ll miss being woken at 4:30, but I understand the sentiment. I try not to get caught up in the moment of the hard mornings and hope that in a few months this will pass. Until then, I’m weary, people.

You know what’s good for weariness? Easy dinners. That’s what I have for you today. These turkey lettuce wraps were a last minute inspiration when I decided I wanted something different than turkey burgers again. I had some beautiful large leaves of lettuce that seemed good for wrapping. Matt had no problem wrapping his meat and eating lettuce wraps like a civilized person. I, on the other hand, couldn’t keep my lettuce from tearing and had a pile of meat and lettuce on my plate. I ate the leftovers with romaine lettuce leaves, as you see here, which work WAY better since they have that sturdy center.

Of course, this meat of ground turkey recipe would be good on buns sloppy joe style, or you could put it over French fries with cheese on top for BBQ cheese fries. BBQ Turkey Lettuce Wraps

This quick and easy dinner is fun to eat and healthy too!

Ingredients

Units Scale
  • 1/2 onion finely chopped
  • 1/2 green bell pepper finely chopped
  • 1/2 teaspoon Cajun seasoning
  • 1 pound ground turkey
  • 1/2 cup BBQ sauce
  • 8 romaine lettuce leaves
  • 1/2 cup cheddar cheese shredded

Instructions

  1. Spray large skillet with cooking spray and heat over medium-high heat. Add onion, bell pepper, turkey, and Cajun seasoning. Cook until vegetables are tender and turkey is cooked through, stirring frequently and crumbling meat as it cooks.
  2. Drain meat if desired. Stir in BBQ sauce, and simmer for a few minutes. Scoop BBQ turkey with a slotted spoon onto lettuce leaves, and sprinkle with cheese while hot. Serve immediately.

Notes

This meat mixture can be made ahead and reheated as needed, but don’t put it on the lettuce leaves until you are ready to eat.

I really have gotten to where I LOVE lettuce wraps! In fact, I had one for lunch today. But I could certainly go for another one, after seeing this post :D It looks so delicious with all of those different flavors going on! ;) Thanks for sharing, Andi! :D
