Today I’m bringing you a quick and easy, low carb, gluten free, and all around healthy lunch idea: Tuna Salad Lettuce Wraps!

Last week I asked my buddies on my Facebook page what they would like to see for today’s recipe. I expected answers like cookies, queso dip, cheese fries, or some other sweet or decadent treat. To my surprise, the requests were for a healthy snack! I do normally try to make my recipes somewhat healthy around here, but it seems like the cheesy or chocolatey recipes always do the best. I’m certainly happy to oblige and make more healthy recipes! This one is actually a lunch, but it could be a snack too. Any time is the right time for tuna salad lettuce wraps if you ask me.

These tasty, low-carb, gluten-free sandwich alternatives only take about 10 minutes to make. The romaine lettuce leaves are really sturdy and just right for holding everything together. Who needs bread when you can wrap your creamy tuna salad in crispy lettuce?

I wrote this recipe to serve one because I often eat lunch on my own, but of course it’s really easy to scale to serve as many as you need. It also makes a great dinner with baked fries. Enjoy :)


Tuna Salad Lettuce Wraps
These simple lettuce wraps stuffed with tuna salad, avocado, and tomatoes make a perfect, healthy lunch!
- Total Time: 10 minutes
- Yield: 4 1x
Ingredients
- 5 oz. can of albacore tuna drained
- 1 tbsp. dill relish
- 1 tbsp. reduced-fat mayonnaise
- 2 tsp. dijon mustard
- 2 large romaine lettuce leaves
- 1 roma tomato diced
- 1/4 avocado sliced
- freshly ground black pepper
Instructions

Stir together tuna, relish, mayo, and mustard.

Evenly spread tuna salad down the center of each lettuce leaf, stopping about two inches away from the green, leafy end.

Arrange avocado slices and diced tomatoes over the tuna salad, sprinkle with pepper to taste, and serve immediately.
