- 2 pounds red and/or gold potatoes diced into 1/2″ cubes
- 1/2 cup light mayonnaise
- 1/2 cup low-fat plain yogurt
- 2–4 tablespoons hot sauce (I used 3.)
- 1/2 teaspoon kosher salt
- small bunch of green onions thinly sliced (about 1/4 c.)
- 2 hard boiled eggs peeled and diced
Instructions
- Place diced potatoes in a medium-sized stockpot, and cover with water. Add about 1 tsp. salt, and bring to a boil. Boil for 10 minutes or until fork very easily glides into potatoes. Drain and gently rinse with cold water for about one minute.
- In a large bowl, whisk together mayonnaise, yogurt, hot sauce, and salt. Fold in potatoes, green onions, and boiled eggs until evenly combined. Eat immediately or refrigerate until ready to serve.
