Cajun Seasoning

  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 teaspoons smoked paprika

Creamy Chicken Pasta

  • 1/2 lbs penne pasta
  • 1 lb chicken breast boneless, skinless
  • 1 yellow onion diced
  • 15 oz fire-roasted tomatoes
  • 2 cup chicken broth
  • 2 oz cream cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 green onions sliced

Instructions

  1. First of all, combine all the ingredients for the Cajun seasoning in a small bowl.
  2. Then, cut the chicken into 1/2 to 3/4-inch cubes, place the cubed chicken in a bowl, and pour the Cajun seasoning over. Stir to coat the chicken with spices.
  3. Add the olive oil and butter to a large deep skillet. Heat them over medium-high until the skillet is very hot and the butter is melted.
  4. Next, add the seasoned chicken to the skillet and cook it for a couple of minutes on each side. Keep in mind that the chicken breast does not need to be cooked thoroughly at this point.
  5. Add the diced yellow onion to the skillet and continue to sauté just until the onion begins to soften (for about 2 minutes).
  6. Then, add the uncooked pasta, fire-roasted diced tomatoes (also use the remaining tomato juice), and chicken broth to the skillet. Stir just until everything is evenly combined, then cover with a lid and allow the mixture to come up to a boil.
  7. When they come to a boil, turn the heat down to medium-low and let the pasta simmer for about ten minutes. Also, stir every couple of minutes, until the pasta is tender and the sauce is thicker.
  8. Next, add the cream cheese to the skillet and stir until it has melted into the sauce.
  9. Finally, top the cajun pasta with sliced green onions and serve.
