Cajun Seasoning
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 teaspoons smoked paprika
Creamy Chicken Pasta
- 1/2 lbs penne pasta
- 1 lb chicken breast boneless, skinless
- 1 yellow onion diced
- 15 oz fire-roasted tomatoes
- 2 cup chicken broth
- 2 oz cream cheese
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 green onions sliced
Instructions
- First of all, combine all the ingredients for the Cajun seasoning in a small bowl.
- Then, cut the chicken into 1/2 to 3/4-inch cubes, place the cubed chicken in a bowl, and pour the Cajun seasoning over. Stir to coat the chicken with spices.
- Add the olive oil and butter to a large deep skillet. Heat them over medium-high until the skillet is very hot and the butter is melted.
- Next, add the seasoned chicken to the skillet and cook it for a couple of minutes on each side. Keep in mind that the chicken breast does not need to be cooked thoroughly at this point.
- Add the diced yellow onion to the skillet and continue to sauté just until the onion begins to soften (for about 2 minutes).
- Then, add the uncooked pasta, fire-roasted diced tomatoes (also use the remaining tomato juice), and chicken broth to the skillet. Stir just until everything is evenly combined, then cover with a lid and allow the mixture to come up to a boil.
- When they come to a boil, turn the heat down to medium-low and let the pasta simmer for about ten minutes. Also, stir every couple of minutes, until the pasta is tender and the sauce is thicker.
- Next, add the cream cheese to the skillet and stir until it has melted into the sauce.
- Finally, top the cajun pasta with sliced green onions and serve.
