Coconut Chocolate Snickerdoodle Bars

Ingredients

  • 1 stick butter melted
  • 17.9 oz. package snickerdoodle mix including cinnamon-sugar packet
  • 2 tbsp. water
  • 1 egg
  • 3/4 c. semi-sweet chocolate chips
  • 1/4 c. shredded unsweetened coconut

Instructions

  1. Preheat oven to 350 degrees F. Spray 9 x 13″ baking dish with cooking spray.
  2. Stir together melted butter, cookie mix (remove sugar packet first!), water, and egg until smooth. Evenly spread cookie dough into prepared pan.
  3. Sprinkle chocolate chips over dough, then sprinkle coconut. Lightly press chocolate and coconut into the dough. Sprinkle approximately 2 tbsp. of cinnamon sugar evenly over the top.
  4. Bake in preheated oven for 25-30 minutes, until edges are beginning to brown and center is cooked through. Allow to cool slightly before cutting.

Notes

If using sweetened coconut, lightly sprinkle the top with ground cinnamon instead of cinnamon-sugar.
You may substitute your favorite homemade snickerdoodle dough if you prefer!
