Get ready to be obsessed with these very easy coconut chocolate snickerdoodle bars.
You know that (super annoying) saying, “Nothing tastes as good as skinny feels.”? That question weighs heavy on my mind regularly because, frankly, a lot of things taste better to me than being skinny. Like, most things taste better. I have mentioned a few times lately that I am making some half-hearted efforts to lose ten pounds. The problem is, do you know what losing weight requires? Eating less! That sounds like a really bad deal to me! So, lately I’ve been having an internal struggle over dieting to slim down versus eating what I want (within reason) and being happy with myself. Today, I am clearly leaning toward the latter. Who wants to diet when you could be eating coconut chocolate snickerdoodle bars? I’m kind of embarrassed to share glamour shots of these heavenly good bar cookies because they are ridiculously easy to make thanks to cookie mix. Of course, you could substitute your favorite homemade snickerdoodle dough here. I might do that next time, but I happened to have snickerdoodle mix in my pantry that I bought half off after the holidays, which is how these cookie bars were born! I’m still going to try to drum up the motivation to exercise more and not eat quite so much, but you can’t make me give up dessert! There is no way skinny can taste as good as chocolate, coconut, and cinnamon!
You would never know these delicious cookie bars are not made from scratch!

Ingredients

1 stick butter melted
17.9 oz. package snickerdoodle mix including cinnamon-sugar packet
2 tbsp. water
1 egg
3/4c. semi-sweet chocolate chips
1/4c. shredded unsweetened coconut
Instructions
Preheat oven to 350 degrees F. Spray 9 x 13″ baking dish with cooking spray.
Stir together melted butter, cookie mix (remove sugar packet first!), water, and egg until smooth. Evenly spread cookie dough into prepared pan.
Sprinkle chocolate chips over dough, then sprinkle coconut. Lightly press chocolate and coconut into the dough. Sprinkle approximately 2 tbsp. of cinnamon sugar evenly over the top.
Bake in preheated oven for 25-30 minutes, until edges are beginning to brown and center is cooked through. Allow to cool slightly before cutting.
Notes
If using sweetened coconut, lightly sprinkle the top with ground cinnamon instead of cinnamon-sugar. You may substitute your favorite homemade snickerdoodle dough if you prefer!

I’m with you on wanting to enjoy foods and not always caring so much if they’re full of fat and sugar. Means I have to pay the piper by working out, but well worth it :-) These bars look amazing, Andi!

Thanks, Liz! You are a good person for working out. I’m trying to get going, but I keep starting and stopping workout programs. That’s better than not starting at all I guess, which is what I was doing until very recently!

Can’t find cookie mix. Who makes it?

I used Betty Crocker mix, and it comes in a pouch near the cake mixes. If you are in the US, it should be easy to find at the grocery store, Target, etc.

Good heavens being a food blogger AND worrying about weight—–what a conundrum. Then you come up with something soooo good AND make it easy. Man you do put yourself in a bind. By blogging the recipe you also want to put everyone else in the same bind. Lol. Well that works for
me. I will be a winner at work, because my co-workers really groove on coconut and chocolate—particular my boss who is one of those super skinny people. Sigh.

I know. It’s a tough spot! Today I posted a super healthy dinner recipe, so that makes up for it, right? Everything in moderation ;) P.S. I don’t trust skinny people who love chocolate and coconut. That just isn’t fair!

It is hard to eat less, especially when you love to bake and cook! These Snickerdoodle bars must taste better than skinny with coconut and chocolate added in! They look delicious, Andi!
