- 2 1/2 pounds potatoes
- 1 1/2 cups pepper jack cheese grated
- 1/2 cup Parmesan cheese grated
- 1 1/2 cups heavy cream
- salt and pepper
Instructions
- Place potatoes in microwave for 4-5 minutes to cook partially through. Remove from microwave and carefully cut into thin, round slices. You may want to wear an oven mitt on the hand steadying the potatoes.
- Place half of the potato slices in a greased 9×9” pan. Sprinkle with salt and pepper, then layer in half of the pepper jack, parmesan, and heavy cream.
- Repeat with the second layer of potatoes, salt and pepper, pepper jack, parmesan and cream.
- Cover pan with aluminum foil, and place in oven to bake for about 25 minutes. Remove foil, and bake uncovered for an additional 5 minutes to allow light browning. Remove pan from oven, and allow to rest for several minutes to allow sauce to thicken.
