French Apple Cake with Rum Recipe

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 3 tablespoon dark rum
  • 1 teaspoon vanilla extract
  • 2 baking apples peeled, cored and cut
  • powder sugar for decorating (optional)
  • minced nuts and granulated sugar for decorating (optional)

Instructions

  1. Preheat the oven to 350°F and grease a regular cake pan with butte or use some baking paper.
  2. In a small bowl, whisk together the flour, baking powder and salt.
  3. Using a mixer, cream the butter and granulated sugar until light and fluffy (about 3 minutes).
  4. Next, add the eggs, one at a time, mixing well and scraping down the sides of the bowl after each addition.
  5. Beat in the vanilla and rum.
  6. Add the flour mixture and mix on low speed until the mixture looks combined.
  7. Using a rubber spatula, add the chopped apples.
  8. Scrape the batter with apples into the prepared baking pan and even the top. Sprinkle evenly with 1 tablespoon of granulated sugar and the minced nuts (if you used any).
  9. Bake it for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  10. After letting it cool to room temperature, using a fine sieve, dust with powder’ sugar (if using any).
