  1. Preheat oven (or toaster oven) to 400 degrees F. Toss brussels sprouts with olive oil, salt, garlic powder, and chili powder. Place brussel sprouts and sliced sausage on a baking dish lined with aluminum foil. Roast for 20-30 minutes until sprouts are dark brown.
  2. Meanwhile, cook quinoa according to package directions, including spice package.
  3. Five minutes before quinoa is done, stir in drained tomatoes. Stir in cooked brussels sprouts and sausage, or arrange them over the top of each serving. Enjoy!
