This 30-minute quinoa recipe with sausage and roasted brussels sprouts is a perfect healthy meal for busy weeknights!



Are you looking for a new quinoa recipe idea? I know quinoa is all the rage, but this ingredient was pretty new to me when I wrote this post in 2013. In fact, I avoided saying it out loud because I didn’t know how to pronounce it. If you are like me and wonder what the heck is this grain everyone is talking about, head on over to Wikipedia and learn more than you probably want to know about it. My takeaways are that it’s good for you and pronounced KEEN-wah. Good enough! Now it’s two years later, and I use quinoa all the time! It’s a whole grain like brown rice, but it cooks up in about 20 minutes. It has a great texture and looks really pretty to boot. This recipe combines it with some of my favorite ingredients: tomatoes, sausage, and brussels sprouts. If any of those aren’t your favorite ingredients, try making it your own! You could leave out the tomatoes or try roasted broccoli instead of brussel sprouts. Let me know in the comments what your perfect version is like!

Quinoa with Sausage and Brussels Sprouts: An easy quinoa recipe!
A few ingredients come together to make a healthy, tasty dinner!
- Total Time: 30 minutes
- Yield: 3-4 1x
Ingredients
- 2 c. brussels sprouts
- 1 tbsp. olive oil
- 1/2 tsp. kosher salt
- 1/4 tsp. garlic powder
- 1/2 tsp. chili powder
- 12 oz. fully-cooked chicken or turkey sausage links sliced lengthwise and cut into bite-sized pieces, your choice of flavor
- 5 oz. package of seasoned quinoa or quinoa/brown rice blend
- 14 oz. can petite diced tomatoes drained
Instructions

Preheat oven (or toaster oven) to 400 degrees F. Toss brussels sprouts with olive oil, salt, garlic powder, and chili powder. Place brussel sprouts and sliced sausage on a baking dish lined with aluminum foil. Roast for 20-30 minutes until sprouts are dark brown.

Meanwhile, cook quinoa according to package directions, including spice package.

Five minutes before quinoa is done, stir in drained tomatoes. Stir in cooked brussels sprouts and sausage, or arrange them over the top of each serving. Enjoy!
