Are you a sports fan? This weekend we hosted a BBQ at the park that happened to fall at the same time as the World Cup finals, and the turnout was low. We expected around 50 people, but the cancellations started coming in when people realized the unfortunate timing. I never know anything about what’s going on in sports, so it didn’t even occur to me to check for that. Apparently it’s important, so important that the party two tables down from us brought in a TV and a generator to watch the game! This easy Pizza Pasta Casserole combines all the best of two favorites in one dish! While other people are watching sports, I’d rather be spending my time writing up a recipe like this pizza pasta casserole for you. I love cheesy pepperoni pizza, and sausage pasta is one of my favorites too. This tasty casserole combines those two dishes, and it’s ready in about 30 minutes! This family friendly dinner is just right for weeknights, and it’s great leftover too. Give it a try for dinner soon and let me know how you like it!

  • 14 oz. bite-sized pasta
  • 1 lb. bulk Italian sausage or uncooked sausage links with casings removed
  • 1/2 onion finely diced
  • 4 oz. sliced mushrooms
  • 28 oz. jar marinara sauce
  • 6 oz. baby spinach
  • 1 1/2 c. shredded mozzarella
  • 4 oz. sliced pepperoni

Instructions
  1. Preheat oven to 400 degrees F. Bring a large pot of lightly salted water to a boil. Spray a 9 x 13” baking dish with cooking spray.
  2. Cook pasta according to package directions. Drain and set aside.
  3. While pasta cooks, spray a large skillet with cooking spray, and heat it over medium-high heat. Add sausage, onion and mushrooms to the hot skillet. Cook for 8-10 minutes, stirring and breaking up meat frequently.
  4. Add pasta sauce to the sausage, and bring to a simmer. Stir in spinach, and cook until wilted, 3-5 minutes.
  5. In a large bowl (or the pasta cooking pot), stir together pasta and sauce mixture. Transfer pasta to prepared baking dish. Spread mozzarella over the pasta, and arrange pepperoni slices in an even layer over the cheese.
  6. Bake in preheated oven for 10 minutes, or until cheese is melted and pepperoni are starting to brown.

    We are leaving for the vacation in a week and Im trying to cool and freeze as much meals as possible. Will this freeze well?

      Hi, Kellie. To be honest, I don’t do a lot of freezer cooking, but I think this one would do well just like frozen lasagna. Let me know how it goes if you try it, and have fun on your vacation!

    This looks delicious, Andi. My son would go crazy for the pepperoni on top! We are big sports fans, but mainly football. I’ve never cared about soccer, so I had no idea the final game was happening on Sunday either! I had a babysitter coming so my husband and I could have a date day and he said, “Oh but the final game is today!” The babysitter actually arrived just a little while after the game ended, so it worked out. But yeah…I’d much rather eat this than watch soccer any day! :)

      Thanks, Ashlyn! I’m glad the timing worked out so you could still go on your date. I couldn’t believe how many people missed the party to watch the soccer game. Since I don’t care about sports or am happy to watch things recorded later, I just didn’t get it. Of course I’m the one going to the grocery store during the Super Bowl because it’s empty, so I’m hardly even an American! ;)
