I’m going to be honest with you: My kids eat a lot of boxed macaroni and cheese. They are picky, eat early before the grownups, and love pasta. Mac and cheese is a staple in their diets! I don’t have time to make it from scratch three times a week, so we’re very familiar with the shake-shake-shake of the box. There are so many modifications you could make to this recipe to suit your tastes. Here are a few ideas:
- Stir in leftover taco meat with the beans.
- Use bell peppers instead of tomatoes.
- Instead of making stuffed tomatoes, stir in a drained can of diced tomatoes.
- Use Italian seasoning instead of chili powder and peas instead of black beans. Top each tomato with a dollop of pizza sauce and mozzarella cheese!
