I’m going to be honest with you: My kids eat a lot of boxed macaroni and cheese. They are picky, eat early before the grownups, and love pasta. Mac and cheese is a staple in their diets! I don’t have time to make it from scratch three times a week, so we’re very familiar with the shake-shake-shake of the box. I can feel good about adding mac and cheese to their plates on a regular basis when it’s made by Horizon Organic. Horizon uses real, organic ingredients and has a taste my kids love! It’s not just the kids who love mac and cheese around here, and this time I came up with a meal the whole family could agree on. Meet these Southwest Mac and Cheese Stuffed Tomatoes! Now, I know what you’re thinking. “But, Weary Chef, stuffed tomatoes sound complicated for a quick and easy meal!” First of all, call me Andi. Secondly, I know these look fancy, but it only takes about a minute to scoop each tomato. I promise! I’ll show you how easy it is right here in this video:

When you’ve got your tomatoes scooped and your mac and cheese made, it’s just a matter of spooning said mac into your tomatoes, topping them with a little cheese, and sticking them under the broiler for a few minutes. Before you know it, you’ve got a fun dinner on the table!

There are so many modifications you could make to this recipe to suit your tastes. Here are a few ideas:

  • Stir in leftover taco meat with the beans.
  • Use bell peppers instead of tomatoes.
  • Instead of making stuffed tomatoes, stir in a drained can of diced tomatoes.
  • Use Italian seasoning instead of chili powder and peas instead of black beans. Top each tomato with a dollop of pizza sauce and mozzarella cheese!

Southwest Mac and Cheese Stuffed Tomatoes

These fun and easy stuffed tomatoes are loaded with seasoned mac and cheese with black beans!

Instructions

  1. Fill a 1 1/2 qt. pot 2/3 full of water, and bring to a boil over medium-high heat. Add uncooked macaroni from the package and cook 8-10 minutes as directed. Drain pasta and return to pot.
  2. While water boils and macaroni cooks, scoop out the interior of the tomatoes to prepare for stuffing. Do this by carefully cutting a large hole in the top of each tomato and then scooping out the flesh and seeds with a grapefruit spoon.
  3. Preheat broiler to high.
  4. When macaroni is done, stir in butter and chili powder into the noodles until butter has melted. Then, stir in cheese powder packet and milk until powder is incorporated. Stir in black beans.
  5. Scoop macaroni and beans into each hollow tomato. Pile a couple tablespoons of cheddar cheese on top of each one. Place stuffed tomatoes on a foil-lined baking sheet, and broil for 7-10 minutes or until cheese on top is melted and starting to brown. Serve right away.

So funny, my daughter requested mac and cheese from the box last night for dinner, and she is not a picky eater! Kids love the stuff! I love the idea of stuffing it in tomatoes! I wish I this idea yesterday :)

Tomatoes, yes I love tomatoes!!! This is a great idea because I like the idea of stuffed peppers but don’t necessarily like the pepper part :)
