There seem to be trends in the food world like cake pops, kale chips, and Nutella recipes. Right now caprese seems to be the hotness, and I don’t know what else. If I did know, maybe I’d be a more successful blogger! I’m never up on fashion trends, so why should I do any better with food trends?

Case in point, are Buffalo recipes over? No, not the animal buffalo. I’m talking about the hot sauce kind. I don’t think I ever made Buffalo anything until I started using Pinterest towards the end of 2012. Then I found Cook Lisa Cook’s Loaded Buffalo and Chicken Casserole recipe, and everything changed! (Seriously, you have to try that recipe if you haven’t already. SO GOOD.)

Buffalo Turkey Burgers

My mom is crazy about buffalo wings, but I’m not much of a wing person. I’ll eat a few if you put them in front of me (as is the case with most everything), but they are so greasy and messy! I only like the drumstick kind because I at least understand how to eat those. The other ones with the two little bones and meat in the middle hardly seem worth the trouble. Maybe I should get in on the boneless buffalo wings trend. Are those just pieces of chicken? Or, I’ll stick to buffalo chicken wraps and these burgers, which are both easier to eat all around.

I hope everyone’s not tired of Buffalo recipes yet because I’m just getting started! Now where did I put that bottle of hot sauce…

Buffalo Turkey Burgers by @wearychef

Buffalo Turkey Burgers

These slightly spicy burgers have a great Buffalo flavor!

  • Total Time: 25 minutes
  • Yield: 6 1x

Ingredients

Units Scale
  • 1/4 cup hot chili sauce like Frank’s Redhot
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 2 tablespoons milk
  • 1 1/4 pounds ground turkey
  • 1/2 cups bread crumbs
  • 2 tablespoon blue cheese crumbles or more to taste
  • 6 cheese slices
  • 6 hamburger buns
  • your choice of condiments mayo, lettuce, tomato, pickles, etc.

Instructions

  1. In a large bowl, stir together hot sauce, garlic powder, salt, and milk. Add ground turkey and bread crumbs and stir well to combine. Gently stir in blue cheese.
  2. Divide meat into six balls, and shape into patties.
  3. Heat a skillet over medium-high heat, and spray with cooking spray. Add burger patties to skillet and cook for approximately 7 minutes on each side, until brown and cooked through.
  4. Melt a slice of cheese over the tops of the burgers in the last couple minutes of cooking if desired.
  5. Dress buns with condiments of your choice, add a burger patty to each bun, and enjoy!

Notes

You can also cook these burgers on the grill if you prefer!

Love these turkey burgers. I’ve made them lots since I left my review. I no longer add the breadcrumbs or milk, we didn’t love the texture it gave the patties. Super delicious!

Found recipe on pinterest. Tried this evening for dinner since I didn’t have many ingredients & alot of time. Super easy & quick late night dinner! These burgers are so bomb! I tried mine without the blue cheese & they still turned out really good. I also halved my recipe to do half not spicy for my roommate & the recipe even without the hot sauce/blue cheese added in still amped up my regular turkey burgers. Would deff try again. 10/10. I used a little bit under 1/4 cup of hot sauce because I had halved the recipe but honestly you can use a full 1/4 cup and even a bit more if you enjoy spicy foods cause these were not really spicy at all !

I’ve made these a few times and we love the taste of them but I have two problems – the outside chars quickly way before the inside is cooked. Our other problem is they never get firm they end up coming out like mush. Any suggestions??

Can you freeze these to make at a different time?

I love these so much! I only used 1/2 tsp of salt and it was plenty. I love anything buffalo and I love turkey burgers. I don’t add cheese to turkey burgers but I love cheese on regular burgers. Unless, its a Greek turkey burger, then I mix feta in the patties. I’ve made these twice now, thanks for a wonderful recipe!

Do the nutrition facts include the buns? If so I’ll probably do without to save on calories :)

Thanks for this AWESOME recipe! These are a great dinner or workweek lunch.

Question though: mine seem to be halfway cooked at around 2.5 minutes on one side, so I flip them (total cook time of 5-6 minutes tops). Should I be doing 7 per side, even still?

Thanks!

Hi, Barbara! Thank you so much! I’m really happy to hear that you like my recipe :) The cook time will vary based on how thick your patties are and how hot your pan is. Just cook them until they are done in the center, however long that takes for yours :) Have a good weekend!

My husband and I LOVE this recipe!! He doesn’t like blue or feta cheese, so we used shredded cheddar instead and they always turn out delicious!!!!

Thank you so much, Jessi!! I’m glad you found a way to make them that you both like. xo

Thanks! Shredded cheddar would be perfect! Those of us that love blue cheese can just add it on top! Mmmmm

Adding shredded cheddar to a buffalo turkey burger is a great idea, and it will be surprisingly great with the blue cheese on top. You certainly enjoy food! Keep on discovering the yummiest version of every recipe that you want to try.

I have made these countless times now! I can’t make burgers any other way! My girls aren’t fans of blue cheese so I subbed feta. Thanks so much for the easy, yet extremely flavorful way to make turkey burgers!!

Oh thank you, Gena!! This made my night! Truth be told, I’m a much bigger fan of feta than blue cheese, so I bet I’d like your version even better. Have a good weekend! xo

Give it a shot! You’ll love it! I also use panko crumbs in place of bread crumbs, only because that’s what I always have. Thanks again for the awesome recipe!!

its my first time coming across your blog & I just had to try these. So many difficult recipes but this one was bomb. I used ‘Sweet baby rays buffalo sauce’ and 93% lean turkey beef. It was so moist & delicious I didn’t include buns (totally didn’t need anything else!) but I needed a bit more protein so I whipped up some Chobani Greek yogurt with cilantro and a cut up jalapeño for 6 more grams of protein. Seriously, SO. DELICOUS.

Hi, Stephanie. Thank you so much for this sweet comment! I’m really glad you liked the recipe, and your yogurt sauce on top sounds delicious. I usually skip the bun these days too because I had to give up wheat, and gluten-free buns aren’t very good!

Do you think I could use something besides blue cheese?

Andi Gleeson

Definitely! I have stirred shredded cheddar into burgers with good result, or you could try feta cheese if you like that. Hope that helps!

The Buffalo Turkey burgers were delish. I added a bag of season blend that had onion, celery, green & red bell peppers plus a slice of cheddar cheese. No bun, just lettuce & tomatoes.

I’m so glad you liked them, Teresa! I have started eating my burgers without the bun too. I hardly miss it. Thank you!

We are so much alike Andi :) I don’t keep up on trends either, unless they really interest me! I don’t think Buffalo will go out of style anytime soon, and you need to make what you love. If you follow the trends, then you just blend into the crowd :)

Hi, Lisa! I’m sure you see some trends from Pinterest and what not, which is where I notice them, but I don’t go looking for what’s hot to write about it. Good point about blending in if you follow the crowd!
