You can’t beat this quick pasta skillet recipe loaded with sausage, green beans, tomatoes, and plenty of cheese. Your family will love to eat it, and you’ll love to cook it in under 30 minutes!
This recipe is an oldie but goodie that needed to revamped. I originally posted this way back in April of 2013. The recipe was solid, but it needed better photos. I’m actually not thrilled with these photos either! I hate when I finally get around to rephotographing a recipe and am not happy with the result. The good news is I LOVE this dinner, so it will be my pleasure to make it again and take newer new photos next time.
When I made this originally, it started out as a “throw something together” dinner that turned out to be an “oh wow is this good” dinner. The red wine, roasted tomatoes, andbrowned bits from the sausage all add depth to the flavor, and the tender-crisp green beans give a nice texture. I even got my kids to eat this one, which is a major accomplishment at my house. (They would live off mac and cheese, quesadillas, and hot dogs if they had their way.) I hope it’s a hit with your family too!
P.S. Do you ever think, “I wonder what Andi is doing right now?” If so, you should follow me on Instagram! I share behind the scene photos of what I’m cooking, what the kids are doing, or funny things I see here and there. Just yesterday I shared a teaser photo of this dish (which I actually like better than my “real” photos), and I’d love for you to follow along to see what else I’ve got going on!
In a deep 12″ skillet, heat olive oil over medium-high heat. Saute onion and sausage until onion is tender and sausage is browned. Transfer meat and onions to a bowl and set aside.
Pour wine into pot, and bring to a boil, scraping up any browned bits from the bottom of the pot. Add undrained tomatoes, chicken broth, pasta, and green beans. Return to a boil, and cook according to the cooking time on the pasta package. Stir often, scraping the bottom of the pan, until pasta is tender.
Add sausage and onions back to pot, and stir in 1 c. Italian blend cheese. Turn off heat, and sprinkle remaining 1/2 c. Italian blend cheese and feta over the top. Cover until cheese is melted before serving.
I LOVE skillet dinners! Do you? Check out these easy recipes too!

You are so sweet, Ashlyn. Thank you! I felt like all the photos looked the same, but if they all look delicious, then that’s OK ;) I’m always happy to make something that kids will like!
