If you are looking at this recipe thinking I’ve gone a little cuckoo, just hear me out. I know putting pot roast on a salad might sound a little odd, but think of taco salad or fajita salad with beef. That doesn’t sound weird, right? Ain’t nothing wrong with beef on a salad! This beef is slow cooked with caesar dressing, and the salad is drizzled with more caesar dressing, so it is very flavorful and satisfying.

Have you ever wondered why Caesar salad is named that? I was sure it must have something to do with Julius Caesar, but I was so wrong. It was created in the 1920’s by an Italian immigrant chef, Caesar Cardini, in a restaurant in Tijuana, Mexico! (source: Wikipedia) I’m glad it took off so we can still enjoy it today!

This meal is especially good for a family dinner on busy nights. Start the meat in the morning before work and school, then come home, shred the meat, and serve it up to everyone’s liking. I love when the slow cooker does all the work for me. If you aren’t in the mood for salad, you could serve this meat over rice or on a sandwich with a salad on the side. I love slow cooked roasts because they are so versatile! Sometimes I don’t want to have the same meal for leftovers, so you can use the meat in a totally different way the next day.

  • 1 yellow onion sliced
  • 2.5 pounds beef roast (I used cross rib roast)
  • 1 tablespoon seasoned salt
  • a few dashes worcestershire sauce
  • 1 bottle creamy caesar salad dressing (I used Newman's Own)
  • 3 hearts of romaine chopped
  • 4 tomatoes chopped
  • 1/2 cup shredded parmesan cheese

Instructions
  1. Place sliced onions in slow cooker. Liberally sprinkle seasoned salt over all sides of the roast, and place the meat on top of the onions. Sprinkle a few dashes of worcestershire sauce over the roast.
  2. Pour enough dressing over the meat to cover it completely, but not the whole bottle. (You'll want to save some for the salads.) Cook on low for 8-10 hours.
  3. Turn off slow cooker. Shred cooked meat in the pot, removing any fatty parts. Stir the shredded meat into the sauce, and allow to sit for a few minutes with the lid off.
  4. Place lettuce and tomatoes in large salad bowls. Use a slotted spoon to scoop meat onto each salad. Sprinkle parmesan and drizzle dressing over the meat. Serve!
