Hey there, Weary Chef readers! It’s Dee from Meatloaf and Melodrama, and today I’m sharing these Cheesy Italian Chicken Sliders with you. These quick and easy chicken sandwiches can be on the table in about 20 minutes, and they are super simple to prepare. Even better, they are picky-eater approved and so delicious!

My husband is on a modified low-carb diet. The rest of us don’t need to follow the same diet, but since I’m the chief cook in the family,  I try to make as many low-carb meals as possible. One of our favorite dinners lately is Sheet Pan Skinny Chicken Parm, which has no breading, and also happens to be gluten free. We have this chicken dinner nearly once a week, so I decided to make a slightly different version this time and splurge a little with buns.

I started off with some boneless, skinless chicken tenders because they are so easy to work with and perfect when you need to get dinner on the table fast! Then, I seasoned the chicken and baked it for about 15 minutes on a foil-lined sheet pan. You don’t have to use foil, but it makes cleaning up incredible fast, so why not?! I topped the chicken with some marinara sauce — you can make your own or use your favorite brand. Then, I added plenty of Parmesan and mozzarella cheese.

To make the sliders, I brushed some small buns with a little bit of olive oil and Italian seasoning and placed them on the same pan as the chicken. In about 5 minutes, the cheese was melted, the buns were warm, and these babies were ready to eat! The tenders I used were relatively small, so I used two per bun. If you have small kids, or if you want to turn these into appetizers, use one per bun. Either way, I think you will love these cheesy Italian chicken sliders!

Cheesy Italian Chicken Sliders

Instructions

  1. Preheat oven to 425 degrees
  2. Line a baking sheet with aluminum foil, and spray lightly with non-stick cooking spray
  3. Place chicken on baking sheet, and season with Italian seasoning, garlic powder, salt and pepper
  4. Bake for 15 minutes or until chicken reaches an internal temperature of 165 degrees, according to meat thermometer.
  5. Remove from oven, and top chicken evenly with shredded parmesan, marinara sauce and mozzarella cheese.
  6. Cut small sandwich buns open, place next to the chicken, and spread olive oil and pinch of Italian seasoning on tops of buns
  7. Bake for additional 5 minutes or until cheese is melted and rolls are warm
  8. Place chicken inside of rolls, serve and enjoy!
