10 Delicious Mexican Spaghetti Recipe Ideas

Last week I accepted a challenge from my hubby: cook 10 Mexican spaghetti recipes for dinner in a row! It was such a fun and spicy week! I won’t lie to you; my kitchen’s still suffering because of his smart challenge (tomato sauce is everywhere, chili flakes can be still found in some corners, and my kids promised they won’t be eating spaghetti for the next months)!

However, the recipes were such a success that I couldn’t help but share them with my beloved readers. I can’t wait for you to try them and give me sincere feedback!

1. Mexican Green Spaghetti

A Mexican green spaghetti recipe is made using a creamy and no-spicy poblano sauce. Poblano cream sauce is usually made by mixing sour cream, roasted poblanos, salt, cilantro, onion, lime, and garlic. The main flavor of poblano sauce comes from roasted poblano peppers.

This spaghetti dish is traditionally served as a side in Mexico but it can also be a wonderful one-pot meal for any regular weekday dinner.

2. Taco Spaghetti

Here is a recipe that combines two of my family’s favorite dishes: spaghetti and tacos! It is also a perfect substitute for tacos when you forget to take the wrappers. This one-pot taco spaghetti is a quick, easy, and delicious comfort food dinner that has all the tasty Mexican flavors of tacos but in spaghetti form.

3. Hearty Mexican Spaghetti

You surely have tried this Mexican recipe because is one that we all cook without knowing they are actually traditional Mexican. Ground beef and tomato spicy sauce is one of the first recipes I learned how to make as a kid. Believe it or not, it is still one of my and my family’s favorite dinner dishes!

4. Mexican Spaghetti Bake

Mexican spaghetti in the oven…Just imagine all that melted cheese and crispy crust! Add some fresh basil leaves on top when you remove the dish from the oven, and there you have: a comfort dish that the whole family will love! Also, you don’t have to worry about the complexity of the recipe; just prepare spaghetti and let them in the oven for a couple of minutes.

5. Mexican Spaghetti Squash

Next, we have a surprisingly flavorful recipe including some squash cubes. This is surely one dish for all the squash lovers out there and you can also prepare it all fall dinner nights (considering this is the squash season!).

6. Mexican Spaghetti Pie

Now, if you ask me, this is kind of the same thing as the Mexican spaghetti bake. The only difference I see is the baking time. This recipe requires around 30 minutes in the oven, as you want everything to be super crispy on the outside. Also, as you’d probably already imagine, this spaghetti pie can be served by the slice. On the other hand, the spaghetti bake is a lot creamier and you can’t serve it as cleanly as this one.

7. Creamy Spaghetti with Tomato

Sour cream, a lot of parmesan cheese, tomato sauce, and pasta; and there you have a mouth-watering one-pot spaghetti with a Mexican twist. This vegan recipe of pasta is certain to satisfy any hungry guest and the tomato smell will color your whole house- that’s for sure!

8. Avocado Easy Mexican Spaghetti

Now we’re talking! Finally, one more recipe that is not all about meat, red sauce, and species! This is surely a spaghetti recipe for the girl gatherings from my house. When I and my girlfriends get around we want to spoil ourselves with delicious creamy treats that are still healthy and not full of calories (or at least they look like that).

9. Keto Mexican Spaghetti Squash Casserole

If you looking for a low-carb comfort dish, try this keto squash casserole. Spaghetti squash pasta is mixed with chicken and other tasty ingredients to create a creamy, cheesy keto casserole. Not to mention that each serving has only around 5 g net carbs. Isn’t that just amazing? 

Moreover, you can also create a super good-looking dish from this recipe by just adding spaghetti to the squash case. This is a simple trick that will impress any guest!

10. Mexican Spaghetti Squash Casserole

Well, this is basically the same thing as the previous recipe but without all the struggle of counting the carbs! Here you can add any kind of meat and a lot of sour cream (ammmazing)! The south-of-the-border flavor of the Mexican spaghetti sauce pairs wonderfully with the squash creaminess.
