Guys, I have something special for you today. REALLY special. This drink is one of the most delicious things I’ve ever sipped, and I’m not even exaggerating. If you like coconut, you don’t want to pass this one up. A couple years ago, I started making this on Christmas Eve. I give the kids a mug sans rum before bed, and then The Pants and I drink the spiked version while wrapping gifts. I don’t even mind wrapping ridiculously shaped presents or assembling stubborn toys as long as I have a glass of coquito nearby. Don’t wait until next Christmas to try this! It is perfect for any day of the year, but probably not every day of the year or else you’ll have to buy bigger pants. (That’s the only thing stopping me.)

This creamy coconut cocktail takes a few minutes to whip up and is incredibly delicious!

  • Total Time: 3 hours 5 minutes
  • Yield: 4-6 1x

Ingredients

Scale
  • 2 cans light coconut milk
  • 1 can sweetened condensed milk
  • 1/2 c. water
  • 1 tsp. ground cinnamon
  • pinch of salt
  • 1 c. dark spiced rum You can leave this out and still have a tasty nonalcoholic drink!

 

Notes

  1. Pour all ingredients into a pitcher, and blend with a stick blender or whisk well until smooth.
  2. Refrigerate for 3-4 hours. Whisk again for about one minute before serving. Cheers!

    This cocktail sounds AMAZING!!! I’m not a big drinker, but when I do drink, I enjoy drinks like this one! :D

    If I win, I would mostly likely spend the money on some fun baking dishes or cookware or tableware I have been eyeing. I don’t know where I would put them though…maybe some can go towards a good organizer than as well! ;)

    I would love to use it on something really fun. Maybe towards a mini vacation to somewhere warm. It’s been so cold here lately with the polar vortex, it’s supposed to be -20 tomorrow and I don’t think that’s including the windshield. So a little fun in the sun, would be my choice.         In Indiana. Growing up we would have really cold winters or mild temps with a lot of snow….but it’s been pretty mild for the last 10 years or so, until this year. We’ve been hit with a mix of both this year. A lot of snow and subzero temperatures.

    For the contest, I need a Kitchen Aid stand mixer in the worst way. If I had a few dollars left I would get an extra bowl for it!! Great giveaway. Thank you so much!     I love this coconut drink recipe! I am a Pina Colada girl for sure and I have everything to make this with. Our high today is only in the lower 20’s so I think I might indulge tonight. I have never learned how to drink..lol..my friends have tried everything but if I cannot taste the liquor then I can manage. I think yours will be good! Great idea for sure!
